Bread pudding does not have to be just for dessert. Why not have bread pudding for breakfast? It's tasty, quick and easy to make. Better yet, with ingredients, you have on hand in your pantry and refrigerator; eggs, bread, milk, onion, thyme, cheese, salt, and pepper. If you like a little sweetness you can serve the Farmhouse Breakfast Bread Pudding with maple syrup.
16 Slices of bread, cut into 1-inch cubes (day old if possible)
4 Ounces cooked breakfast sausage, cut into 1/4 inch slices
1/2 Yellow onion, chopped
1 Cup half-and a half or whole milk
2 Tablespoons minced fresh thyme
1 Cup shredded cheddar cheese or your favorite cheese
1/2 Teaspoon salt
1/4 Teaspoon freshly ground pepper
This can be made the night before.
Preheat the oven to 350 degrees. Coat a 10-inch pan or 7 x 11 or 9 x 9 pans. Coat the pan with vegetable oil cooking spray or lightly butter the pan.
In a large bowl, combine the bread cubes, sausage, and onion. In another bowl beat or whisk the eggs- half-and-half or milk, thyme, salt, and pepper together. Pour the egg mixture over the bread mixture and stir in cheese to combine all ingredients. Make sure all the bread is thoroughly coated. Let sit for 10 minutes to absorb. Place in pan and bake for 30 to 35 minutes or until the top is crusty and golden brown.
